Cholesterol-friendly pancakes: tender inside, crispy outside - no butter or egg needed!
Ingredients:
  • 2 tablespoons flax seeds
  • 1.25 cups skim milk, or more as needed
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1.25 cups whole wheat flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.25 cup raisins
  • 0.25 cup sunflower seeds
  • cooking spray
Instructions:
  • Blend flax seeds until finely ground. Combine in a large mixing bowl with milk, then mix in brown sugar and vanilla extract. Set aside.
  • In a separate bowl, lightly mix whole wheat flour, baking powder, and salt. Combine with the milk mixture until just blended. Gently fold in raisins and sunflower seeds. If needed, adjust consistency with a splash of milk until slightly thick.
  • Preheat the griddle to 350 degrees F (175 degrees C) and grease it with cooking spray. Cook 1/4 cup of batter until bubbles form and the edges are dry, about 1 1/2 minutes. Flip and cook for another 1 1/2 minutes until browned. Repeat with the remaining batter.
