Enhance poached plums by adding chili to the syrup for a unique twist. The whole chili adds flavor without heat, making the dish even more delicious when chilled overnight.
Ingredients:
  • 175g caster sugar
  • 1 large red chilli
  • 3 small red chillies
  • 1 lemon grass stalk, trimmed, bruised
  • 8 plums, halved, stone removed
  • Home Brand vanilla ice cream, to serve
Instructions:
  • In a saucepan, combine sugar, chillies, lemon grass, and 3/4 cup (185ml) water. Stir over medium heat until sugar dissolves. Increase heat to high and bring to a boil. Simmer for 10 minutes until slightly thickened.
  • Simmer plums until tender, then let them cool. Serve with ice cream.
