Poached chicken with sweet soy, chilli & shallots

Delicious and healthy low-fat chicken dish.
Ingredients:
  • 750ml (3 cups) water
  • 500ml (2 cups) salt reduced chicken style liquid stock
  • 1 brown onion, coarsely chopped
  • 3cm-piece fresh ginger, peeled, thinly sliced
  • 3 garlic cloves, bruised
  • 1 whole star anise
  • 500g single chicken breast fillets
  • 200g (1 cup) white rice
  • Steamed baby pak choy, to serve
  • Kecap manis, to serve
  • 4 shallots, ends trimmed, thinly sliced diagonally
  • 1 long red chilli, thinly sliced diagonally
Instructions:
  • In a saucepan over high heat, combine water, stock, onion, ginger, garlic, and star anise. Bring to a boil, then add the chicken. Cover and let it poach for 30 minutes.
  • Slice the chicken thinly across the grain on a clean work surface and cover with foil to keep warm.
  • Pour the poaching liquid through a fine sieve into a large jug, discarding the onion, ginger, garlic, and star anise. Pour 560ml (2 1/4 cups) of the liquid back into the pan. Discard the rest of the liquid. Add the rice to the pan, bring to a boil, then simmer covered on low heat for 12 minutes until the rice is tender. Fluff the rice with a fork.
  • Transfer the rice and pak choy to serving plates. Arrange the chicken on top and generously drizzle with kecap manis. Finish it off by sprinkling shallots and chili before serving.
