Delicious blueberry muffins made with heart-healthy ingredients like non-fat milk, egg whites, and polyunsaturated oil for a guilt-free treat.
Ingredients:
  • vegetable oil cooking spray
  • 1.5 cups all-purpose flour, divided
  • 1 cup fresh blueberries
  • 1 egg white
  • 0.5 cup skim milk
  • 2 tablespoons margarine, melted
  • 0.5 cup white sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
Instructions:
  • Preheat the oven to 400 degrees F (205 degrees C) and lightly grease a 12-cup muffin tin with vegetable oil spray.
  • Combine 1/4 cup of flour with the blueberries, then leave it aside.
  • Lightly beat the egg white and vegetable oil together in a bowl, then stir in the milk and melted margarine.
  • Combine the 1 1/4 cups of flour, sugar, baking powder, and salt in a separate bowl. Gently sprinkle the dry ingredients over the egg white mixture. Stir until the flour is moistened - it's okay if the batter looks a bit lumpy, avoid overmixing. Finally, gently fold in the blueberries.
  • Spoon batter into muffin tins, filling 2/3 full. Bake until golden brown, about 20-25 minutes in the preheated oven.
