Boost your morning with a delicious roasted oat muesli featuring superfoods like quinoa, coconut oil, and pepitas.
Ingredients:
  • 300.00 gm traditional rolled oats
  • 250.00 ml quinoa flakes
  • 165.00 ml seed mix (see Notes)
  • 125.00 ml whole sliced almonds
  • 52.50 gm coconut oil
  • 111.38 gm maple syrup
  • 42.90 gm shredded coconut
  • 2.50 gm ground cinnamon
  • 125.00 ml dried cranberries
  • 82.50 ml dried apple, chopped
  • Passionfruit yoghurt, to serve
Instructions:
  • Preheat oven to 180°C (160°C fan-forced).
  • Combine oats, quinoa, seed mix, almonds, coconut oil, maple syrup, shredded coconut, and cinnamon in a large bowl, ensuring everything is well coated. Spread the mixture onto a roasting pan.
  • Bake for 45 minutes, stirring every 10 minutes until golden brown. Mix in cranberries and apple. Let cool completely. Enjoy with passionfruit yogurt.
