Zesty herb dressing coats fresh shrimp and orzo salad - perfect for any meal!
Ingredients:
  • 12 large shrimp - peeled, deveined, and tails left on
  • 1 tablespoon all-purpose seasoning blend
  • 0.5 cup uncooked orzo pasta
  • 1 tablespoon mayonnaise
  • 1 tablespoon chopped fresh dill, or to taste
  • 1 tablespoon chopped fresh parsley, or to taste
  • 1 tablespoon chopped fresh basil, or to taste
  • 1 teaspoon prepared yellow mustard
  • 0.25 teaspoon lemon juice
  • 1 pinch salt and ground white pepper to taste
  • 1 cup cherry tomatoes, halved
Instructions:
  • Step: Boil a large pot of water until bubbling. Then, add shrimp and seasoning. Cook until shrimp turn bright pink on the outside and the meat is opaque, for approximately 5 minutes. Finally, remove the shrimp from the water and place them in a bowl.
  • Add orzo to the seasoned boiling water and cook for about 10 minutes until al dente. Drain the orzo and mix it with the shrimp in a bowl. Chill in the refrigerator until ready to serve.
  • Mix together mayonnaise, dill, parsley, basil, mustard, lemon juice, salt, and white pepper in a bowl until well combined. Adjust seasoning to taste.
  • Take the shrimp and orzo out of the refrigerator. Mix in the cherry tomatoes and dressing thoroughly. Taste and season as needed. Chill for a minimum of 2 hours before serving.
