Whip up a succulent Instant Pot® shrimp scampi and orzo in no time!
Ingredients:
  • 1 pound medium raw shrimp, peeled and deveined
  • 0.33333334326744 cup extra-virgin olive oil
  • 1 shallot, peeled and chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon zest
  • 1 pinch red pepper flakes
  • 0.5 lemon, juiced
  • 2 tablespoons unsalted butter
  • 1.5 cups orzo
  • 2 cups shrimp stock
  • 0.25 cup dry white wine
  • 1 tablespoon coarsely chopped parsley, or to taste
  • 4 lemon wedges
Instructions:
  • In a spacious bowl, gently set the shrimp, ready for the next step.
  • In a multi-functional pressure cooker (like an Instant Pot®), heat olive oil using the Saute function. Add shallot and saute while stirring for 1 1/2 minutes. Stir in garlic, lemon zest, red pepper flakes, salt, and pepper. Cook and stir until garlic is fragrant, for about 1 1/2 minutes. Combine the shallot mixture with the shrimp, mix in lemon juice, and chill in the refrigerator.
  • After cleaning the inner pot, place it back into the Instant Pot® and hit the Saute function. Melt the butter, then mix in the orzo, ensuring it's all coated with butter for about 1 1/2 minutes. Pour in the shrimp stock and white wine, stirring to combine. Bring it to a boil and seal the lid securely.
  • Choose the high pressure setting following the manufacturer's guidelines and set the timer for 4 minutes. Let the pressure build for 10 to 15 minutes.
  • After safely releasing pressure as per the manufacturer's instructions, uncover the pot and evenly arrange the prepared shrimp on top of the orzo.
  • Seal the lid securely, choose high pressure, and set timer for 1 minute. Let the pressure build for 5 to 10 minutes.
  • Carefully quick-release pressure following manufacturer's instructions, for about 5 minutes. Serve hot, garnished with fresh parsley and lemon slices.
