Elevate your dinner game with Instant Pot risotto and shrimp scampi fusion.
Ingredients:
  • 2 tablespoons salted butter
  • 1 tablespoon olive oil
  • 1 shallot, minced
  • 3 cloves garlic, minced
  • 1 cup Arborio rice
  • 1.5 cups chicken broth
  • 0.5 pound frozen raw shrimp - peeled, deveined, and tail off
  • 0.25 cup Pinot Grigio wine
  • 0.25 cup freshly grated Parmesan cheese
  • 0.5 teaspoon red pepper flakes
  • 1 tablespoon freshly squeezed lemon juice, or to taste
  • 1 teaspoon minced fresh parsley
Instructions:
  • Preheat your Instant Pot using the Saute function. Melt butter and olive oil, then saute shallot and garlic until fragrant. Stir in Arborio rice and cook for 2 minutes. Pour in chicken broth, mix, then turn off the Saute function.
  • Seal the lid securely and choose high pressure setting following the manufacturer's guidelines; set the timer for 12 minutes. Let the pressure build for 10 to 15 minutes.
  • Allow pressure to release naturally for 25 minutes, then carefully release the remaining pressure using the quick-release method for about 5 minutes.
  • Remove the lid and place frozen shrimp into the pot, then pour in white wine without stirring. Secure the lid, ensuring it is tightly closed. Cook on high pressure for 3 minutes following the manufacturer's guidelines, and allow pressure to build for 10 to 15 minutes.
  • Quick-release pressure for about 5 minutes, then unlock and remove the lid. Stir in Parmesan cheese and red pepper flakes, then garnish the risotto with a squeeze of lemon juice and parsley.
