30-minute Instant Pot Asian shrimp scampi.
Ingredients:
  • 3 tablespoons unsalted butter
  • 1 shallot, finely chopped
  • 1 teaspoon grated fresh ginger root
  • 0.5 cup dry sherry
  • 0.5 cup chicken broth
  • 2 tablespoons soy sauce
  • 0.25 teaspoon freshly ground black pepper
  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons chopped green onions, divided
  • 1 tablespoon sesame oil
  • 1 teaspoon toasted sesame seeds, or to taste
Instructions:
  • Preheat Instant Pot on Saute function. Melt butter, then saute shallot for 1 minute. Add garlic and ginger, saute for another minute.
  • Add sherry and deglaze the pot, letting it cook for 3 minutes. Cancel the cooking mode. Mix in chicken broth, soy sauce, and pepper. Gently introduce shrimp to the mixture.
  • Seal the lid securely, choose high pressure per manufacturer's guidance, and set the timer for 1 minute. Wait for the pressure to build for 5 to 10 minutes.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions for around 5 minutes. Take off the lid and gently mix in 2 tablespoons of green onions and sesame oil. Top it off with sesame seeds and the rest of the green onions for garnish.
