Quick and easy Instant Pot shrimp and broccoli stir-fry with succulent shrimp, crisp broccoli, and a sweet and spicy umami sauce.
Ingredients:
  • 0.25 cup reduced-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 1 teaspoon brown sugar
  • 1 teaspoon Sriracha sauce
  • 1 teaspoon minced garlic
  • 1 pound raw peeled and deveined shrimp
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 2 cups fresh broccoli florets
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds
Instructions:
  • Combine all the soy sauce, oyster sauce, rice vinegar, sesame oil, brown sugar, Sriracha, and garlic in a small bowl and whisk until the mixture is smooth.
  • In a versatile pressure cooker like an Instant Pot, add the sauce and shrimp. Seal the lid, selecting high pressure for 0 minutes following the manufacturer's guidelines. Let the pressure build for 10 minutes before continuing.
  • Combine cornstarch and cold water in a small bowl, whisking until smooth.
  • 1. Carefully release pressure using the quick-release method for about 2 minutes following the manufacturer's instructions. Remove the lid. Add cornstarch slurry and broccoli. Switch to the Sauté function and cook until sauce thickens and broccoli is crisp-tender for about 2 minutes.
  • Sprinkle green onions and sesame seeds over the shrimp and broccoli for a flavorful finishing touch.
