Delicious Instant Pot Shrimp Boil Soup, all the flavors in a convenient soup. Perfect for meal prepping lunches.
Ingredients:
  • 1 onion, chopped
  • 7 ounces smoked sausage, sliced into rounds
  • 2 pounds red potatoes, chopped
  • 3 cups frozen corn kernels
  • 1/4 cup chopped parsley
  • 1/2 Tablespoon liquid shrimp and crab boil
  • 2 teaspoons Old Bay (R) seasoning
  • 4 cups chicken broth
  • 1 pound shrimp, medium raw, peeled and deveined
  • 1 lemon, wedged
Instructions:
  • In a multi-functional pressure cooker (such as Instant Pot®), sauté olive oil, chopped onion, and sliced smoked sausage for 5 minutes using the Sauté function. Turn off the heat.
  • Combine potatoes, garlic, corn, parsley, liquid shrimp boil, seafood seasoning, and chicken broth in the pot. Seal the lid and set the pressure cooker to high pressure for 20 minutes following the manufacturer's guidelines. Let the pressure build for 20 minutes.
  • Release the pressure using the quick-release method following the manufacturer’s instructions for about 5 minutes. Remove the lid and stir in the shrimp. Cover with the lid again and let it stand for 10 minutes.
