Instant Pot Low Country Boil: Andouille sausage, potatoes, corn, shrimp cooked in beer for a flavorful twist.
Ingredients:
  • 1 (12 ounce) package andouille sausage, sliced
  • 1.5 pounds baby red potatoes, halved
  • 1 medium onion, chopped
  • 4 teaspoons seafood seasoning (such as Old Bay®)
  • 1 (12 fluid ounce) can or bottle beer
  • 3 ears corn, husked and cut into thirds
  • 12 ounces frozen shell-on shrimp
Instructions:
  • In your multi-functional pressure cooker, mix andouille sausage, potatoes, and onion. Sprinkle with seafood seasoning, pour in beer, and top with corn pieces. Seal the lid, set to high pressure for 1 minute per manufacturer's instructions, and wait for pressure to build for 20 minutes.
  • Carefully quick-release pressure following manufacturer's instructions for about 2 minutes. Unlock and remove the lid, then stir in the shrimp before closing and locking the lid.
  • Choose the high-pressure setting following the manufacturer's guidelines, and set the timer for 0 minutes. Let the pressure build for 10 minutes.
  • Carefully release pressure using the quick-release method following manufacturer's instructions for about 2 minutes, then unlock and remove the lid.
