Spicy shrimp orzo with briny olives - ready in 30 minutes!
Ingredients:
  • 1 1/2 cups dry orzo
  • 3 tablespoons extra virgin olive oil, divided
  • Zest and juice of 1 lemon (about 2 tablespoons juice)
  • 1/2 teaspoon ground turmeric
  • 1 1/4 teaspoons kosher salt, divided, plus more for pasta water
  • 1 cup pitted mild green olives, such as green Picholine or Castelvetrano, crushed
  • 3 tablespoons harissa, divided
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1 pound peeled and deveined shrimp (16/20)
Instructions:
  • Preheat the grill to a sizzling 450°F. If opting for wooden skewers, simply soak 6 or 7 of them in water for roughly 20 minutes.
  • While the chicken is baking, prepare the orzo: In a medium pot, bring salted water to a boil. Cook the orzo as per package instructions, then drain in a colander over the sink before returning it to the pot.
  • Prepare the orzo: Combine 1 tablespoon of olive oil, lemon zest, lemon juice, turmeric, and 1 teaspoon of salt in the orzo. Gently mix in the olives.
  • Prepare the shrimp: Combine the 2 tablespoons of olive oil, 2 tablespoons of harissa, paprika, cumin, garlic powder, and the remaining 1/4 teaspoon salt in a large bowl. Mix well. Add the shrimp and coat them in the mixture. Skewer the shrimp onto metal or soaked wooden skewers. Optional: wear disposable gloves for easier handling.
  • Grill the shrimp: Grill for 2 minutes, flip, and baste with 1 tablespoon harissa. Cook until opaque and just cooked through, about 2 minutes. Serve with orzo. Store leftovers in an air-tight container in the fridge for up to 2 days. To reheat without making them rubbery, place shrimp under the orzo. Enjoy and leave stars if you loved it!
