Make Carrabba's Chicken Bryan at home - easy and full of flavor!
Ingredients:
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 1 tablespoon minced yellow onion
  • 0.5 cup dry white wine
  • 0.25 cup fresh lemon juice
  • 0.66666668653488 cup cold butter, sliced
  • 1.5 cups chopped sun-dried tomatoes
  • 0.25 cup chopped fresh basil
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon ground white pepper
  • 6 skinless, boneless chicken breast halves
  • 1 tablespoon extra-virgin olive oil, or as needed
  • 0.5 teaspoon ground black pepper
  • 1 (8 ounce) package caprino (goat's milk) cheese
Instructions:
  • In a large skillet over medium heat, melt 2 tablespoons of butter. Sauté garlic and onion until tender, about 3 to 4 minutes. Add wine and lemon juice, increase heat to medium-high, and let simmer until reduced by half, approximately 10 minutes. Reduce heat to low and gradually stir in cold butter slices. Mix in tomatoes, basil, kosher salt, and white pepper. Remove skillet from heat and set aside.
  • Coat chicken breasts in olive oil and season with salt and black pepper.
  • Get your outdoor grill nice and hot at medium-high heat and give the grate a light coating of oil.
  • Grill the chicken until cooked through, about 15 to 20 minutes. Add goat cheese on top of each chicken breast towards the end of cooking. Finish by spooning sun-dried tomato sauce over the chicken.
