Satisfy your craving for smoky and spicy chipotle chicken with this simple grilled chicken recipe inspired by a popular restaurant chain.
Ingredients:
  • 1 ounce dried chipotle chile pepper
  • 1 ounce dried ancho chile pepper
  • 0.5 cup water
  • 0.5 red onion, cut into small chunks
  • 4 cloves garlic
  • 2 teaspoons sea salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 2.5 pounds skinless, boneless chicken thighs
Instructions:
  • Soak chipotle and ancho chile peppers in water in a shallow bowl, covered, until softened, about 10 to 12 hours at room temperature. Discard water and deseed the peppers.
  • Create a flavorful paste by blending chile peppers, red onion, garlic, sea salt, cumin, oregano, and black pepper in a blender. Then, pour in olive oil and blend until the marinade is silky smooth.
  • Lay chicken thighs between plastic sheets on a sturdy surface and gently pound with a meat mallet to 1/2-inch thickness.
  • Add the chicken to a resealable plastic bag along with the marinade. Massage the chicken in the bag to ensure it is fully coated. Seal the bag and allow the chicken to marinate in the refrigerator for a minimum of 8 hours.
  • Heat up an indoor grill with top and bottom plates until it reaches medium-high heat.
  • Discard marinade from the bag and remove the chicken.
  • Grill chicken until fully cooked, about 5-7 minutes with the lid closed. Use a thermometer to ensure it reaches 165°F (74°C) in the center. Slice cooked chicken into strips and serve warm.
