Make Chipotle-style guacamole at home with lime, cilantro, and tortilla chips. Delicious and satisfying!
Ingredients:
  • 4 ripe Hass avocados
  • 3 cloves garlic, peeled
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/2 medium red onion
  • 1/2 large jalapeño, optional
  • 1/4 cup chopped cilantro
  • 2 tablespoons fresh lime juice (squeezed from 1 large lime)
  • To Serve
  • Tortilla chips, store-bought or homemade
Instructions:
  • Create flavorful garlic paste: Roughly chop garlic cloves, then combine with 1/2 teaspoon salt. Crush the mixture by dragging the flat side of a knife over it for 1 to 2 minutes.
  • Finely chop the vegetables: Chop the red onion and jalapeño pepper into pieces smaller than 1/4 inch (onion) and 1/8 inch (pepper). Use about 1/4 cup of red onions and 1 tablespoon of jalapeños. Remove the jalapeño seeds for a less spicy dip.
  • Prepare the guacamole by slicing and scooping out the avocado into a large bowl. Lightly mash the avocado with a fork, keeping it slightly chunky. Add the garlic paste, red onion, jalapeño pepper, and cilantro to the bowl. Pour in the lime juice and gently fold all ingredients together. Taste and adjust salt as needed.
  • To store the guacamole, press plastic wrap directly onto its surface before covering the bowl with a lid. Refrigerate for up to 3 days. If browning occurs, simply scrape it off to reveal the vibrant green guacamole beneath.
