Impress your guests with this flavorful copycat Carrabba's® Chicken Bryan.
Ingredients:
  • 2 tablespoons dry white wine
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 tablespoon prepared pesto
  • 1 lemon, zested and juiced
  • 1 clove garlic, minced
  • 2 chicken leg quarters
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced white onion
  • 1 teaspoon minced garlic
  • 0.5 cup white wine
  • 0.25 cup lemon juice
  • 0.25 cup chopped sun-dried tomatoes in oil, drained
  • 1 teaspoon prepared pesto
  • 1 (4 ounce) log goat cheese, sliced into 4 rounds
Instructions:
  • Combine white wine, oil, oregano, pesto, lemon zest and juice, garlic, salt, and pepper in a small bowl and whisk thoroughly to create a flavorful marinade.
  • Place the chicken leg quarters in a resealable plastic bag, pour in the marinade, seal the bag, and shake well to coat the chicken completely. Refrigerate for at least 2 hours, flipping the bag after 1 hour for even marination.
  • Preheat the oven to 425 degrees F (220 degrees C) and allow the chicken to come to room temperature as it warms up.
  • Remove the flavorful marinade from the chicken and gently dry it with a paper towel before transferring it to a baking dish.
  • Place the seasoned chicken in the preheated oven for 20 minutes. Flip the chicken and continue cooking until fully cooked and juices run clear near the bone, approximately 20 more minutes. Use an instant-read thermometer, ensuring it reads 165 degrees F (74 degrees C) when inserted near the bone of a quarter.
  • While the chicken finishes baking, allow the goat cheese to come to room temperature and prepare the sauce.
  • In a skillet over medium heat, sauté onion and garlic in butter until soft, about 5 minutes. Stir in white wine and lemon juice, then add sun-dried tomatoes, pesto, salt, and pepper. Simmer on low heat until slightly thickened, around 15 minutes.
  • Take the chicken out of the oven and place 2 slices of goat cheese on each chicken quarter, 1 on each thigh and 1 on each leg. Drizzle equal amounts of sauce over the chicken and serve right away.
