Family-friendly chicken parmesan - a tasty, nutritious meal.
Ingredients:
  • 2 x 250g chicken breast fillets
  • 60g All-Bran Original
  • 60g (1 cup) fresh white breadcrumbs
  • 1 egg
  • 41.20 gm reduced fat milk
  • 50g (1/3 cup) plain flour
  • 9.20 gm olive oil
  • 500ml (2 cups) Mutti Tomato Passata
  • 82.50 ml fresh basil leaves, torn
  • 75g fresh light mozzarella, sliced
  • Steamed greens, to serve
Instructions:
  • Preheat the oven to 200°C (180°C fan forced). Slice each chicken breast in half horizontally to create 4 thin fillets. Place the chicken between two sheets of baking paper and pound with a rolling pin until it's about 3-4mm thick. Mix All-Bran Original and breadcrumbs in one shallow bowl. In another bowl, whisk together eggs and milk. Place flour in a third shallow bowl.
  • Coat chicken in flour, egg mixture, and breadcrumbs one by one. Lightly spray with olive oil and place on a wire rack over a baking tray. Bake in preheated oven till golden, about 8-10 minutes.
  • Heat oil over medium heat in a saucepan. Sauté garlic for 30 seconds. Pour in passata and sugar, simmer for 5 minutes. Remove from heat and stir in half of the basil.
  • Spread half of the tomato sauce in a large shallow ovenproof baking dish. Place the chicken pieces on top, then pour the rest of the sauce over them. Add torn mozzarella on top. Bake until the cheese is bubbly and melted, about 10-12 minutes. Sprinkle with remaining basil leaves and serve with steamed greens.
