Wholesome ground chicken-chickpea burgers with quinoa, oat bran, prunes, and a twist of beets for a flavorful twist.
Ingredients:
  • 1.5 cups water
  • 0.5 cup dry quinoa
  • 1 (15.5 ounce) can chickpeas
  • 8 ounces ground chicken
  • 0.5 cup egg whites
  • 0.5 cup minced beets
  • 0.5 cup oat bran
  • 0.25 cup minced onion
  • 3 prunes, minced
  • 1 tablespoon minced poblano pepper
  • 1 teaspoon salt
  • 1 teaspoon ground chile pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground black pepper
Instructions:
  • In a saucepan, bring water and quinoa to a boil. Lower the heat, cover, and simmer until the quinoa is tender, about 15-20 minutes.
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Roughly mash chickpeas, then mix in quinoa, chicken, egg whites, beets, oat bran, onion, prunes, poblano pepper, salt, chile powder, cumin, and black pepper until well combined. Shape into 6 patties of equal size and wrap in aluminum foil.
  • Roast in the preheated oven until cooked through and tender, approximately 20 minutes. Use an instant-read thermometer to ensure the internal temperature reaches a minimum of 165 degrees F (74 degrees C).
