Elevate ground lamb with fragrant tikka curry, cauliflower, and spinach for a delicious meal.
Ingredients:
  • 1 brown onion, thinly sliced
  • 200g butternut pumpkin, peeled, seeded, cut into 3cm pieces
  • 500g lamb mince
  • 60g curry paste
  • 250.00 ml small cauliflower florets
  • 400g can diced tomatoes
  • 125ml chicken stock
  • 100g baby spinach leaves
  • 100g Greek-style yoghurt
  • Steamed basmati rice, to serve
Instructions:
  • Spritz a generous amount of olive oil spray in a large frying pan over medium-high heat. Add the onion and pumpkin and cook for about 5 minutes until they are lightly browned. Then, add the mince and cook for 3-4 minutes, using a wooden spoon to break up any lumps, until the mince changes color.
  • Stir in the aromatic curry paste to the mince mixture in the pan for 1 min. Add cauliflower, tomato, and stock. Bring to a boil, then simmer partially covered for 10 mins until the pumpkin is tender and the sauce thickens slightly.
  • Gently fold in fresh spinach and cook until wilted, about 1 minute. Take off heat and swirl in creamy yogurt. Enjoy with a side of fluffy rice.
