Creamy keto broccoli-Cheddar soup for a satisfying and quick meal.
Ingredients:
  • 1 tablespoon butter
  • 0.25 cup minced shallot
  • 2 cups chicken broth, divided
  • 2 ounces cream cheese, softened
  • 0.5 cup heavy whipping cream
  • 8 ounces shredded Cheddar cheese
  • 6 ounces frozen broccoli rice
  • 0.5 teaspoon garlic granules
  • 1 teaspoon xanthan gum
  • freshly ground black pepper to taste
Instructions:
  • In a saucepan set over medium heat, melt the butter until it is bubbling and fragrant. Add the shallots and cook them, stirring occasionally, until they turn a golden caramel color, which should take approximately 5 minutes.
  • Gradually pour in 1/2 cup chicken broth while stirring to release the flavors of the shallot. Mix in the cream cheese until smooth. Pour in the remaining broth and whipping cream. Add Cheddar cheese, riced broccoli, and garlic granules. Let it simmer for 4 minutes.
  • Sprinkle in the xanthan gum and whisk persistently until the soup thickens, about 2 to 3 minutes. Serve promptly with a sprinkle of freshly ground black pepper.
