Creamy cauliflower rice risotto with spinach, mushrooms, and tomatoes: a delicious, nutritious, keto-friendly dish.
Ingredients:
  • 0.25 cup olive oil
  • 2 cups brown mushrooms, sliced
  • 0.5 cup fresh spinach, or more to taste
  • 2 cloves garlic, minced
  • 2 cups frozen riced cauliflower
  • 0.33333334326744 cup heavy cream
  • 1 teaspoon paprika
  • 1 pinch garlic salt, or to taste
  • salt and ground black pepper to taste
  • 0.5 cup cherry tomatoes, halved
Instructions:
  • Preheat a cast iron skillet over gentle heat. Drizzle in olive oil, then add mushrooms, spinach, and garlic. Cook until mushrooms are tender, spinach is wilted, and garlic is aromatic, for about 5 to 7 minutes, being careful not to overcook.
  • Combine cauliflower rice and cook until it reaches a rice-like consistency, for 5 to 7 minutes. Add heavy cream, paprika, garlic salt, salt, and pepper, and simmer for an additional 5 minutes. Finally, gently fold in tomatoes until they just soften, for 3 to 5 minutes.
