Keto-friendly baked chicken breasts topped with creamy spinach and artichokes, feta, and Parmesan.
Ingredients:
  • 1 (9 ounce) package fresh spinach
  • 1 (14.5 ounce) can artichoke hearts, drained and chopped
  • 1 cup mayonnaise
  • 0.5 cup shredded Parmesan cheese
  • 1 (4 ounce) package crumbled feta cheese
  • 6 skinless, boneless chicken breast halves
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • In a skillet over medium heat, warm olive oil. Add spinach and garlic, cook until spinach wilts (3-4 minutes). Drain in a sieve, squeeze out excess liquid, transfer to a mixing bowl. Combine with artichoke hearts, mayonnaise, Parmesan, and feta; stir until mixed well.
  • Lay the chicken breasts in a 9x12-inch baking pan without greasing it, then evenly spread the artichoke spinach mixture over the chicken.
  • Bake in the preheated oven until the chicken is juicy and the cheese topping is golden brown around the edges, about 25-30 minutes. Remove from the oven and carefully drain any excess liquid from the baking pan.
  • Position an oven rack 6 inches below the heat source and preheat the broiler.
  • Place the baking pan under the broiler until the cheese topping is golden brown, which should take about 2 to 5 minutes.
