Tender slow-cooked pulled pork with crispy crackling on the side - prep, set, forget and indulge!
Ingredients:
  • 1.8kg-piece boneless pork shoulder
  • 5.00 gm paprika
  • 1 small red onion, finely chopped
  • 185ml (3/4 cup) tomato sauce
  • 32.00 gm brown sugar
  • 31.20 gm hot chilli sauce
  • 20.00 ml apple cider vinegar
  • 1 tsp dried chilli flakes
  • Pork rind, optional, for crackling
Instructions:
  • Place the pork in the slow cooker, generously rub with paprika, season well, and sprinkle the onion around the pork.
  • Mix together the tomato sauce, sugar, chili sauce, vinegar, and chili flakes in a bowl. Pour the mixture around the pork, cover, and slow cook on Low for 8 hours, flipping halfway through until the meat is very tender. Once done, transfer the pork to a large bowl and use 2 forks to shred the meat coarsely. Toss the shredded pork with just enough cooking sauce to coat it lightly.
  • Preheat your oven to 220C/200C fan forced. Place the pork rind on a tray and generously sprinkle it with salt. Roast for 40 minutes until it's beautifully crackled. Then, simply cut it into pieces.
  • Serve the pork with the sauce and crackling to your liking.
