Slow cooker garlic butter pulled pork recipe

Tender slow-cooked pork shoulder infused with garlic butter, served with creamy mashed potatoes.
Ingredients:
  • 2 tsp fennel seeds, toasted
  • 1.2-1.5kg boneless pork shoulder
  • 1 brown onion, finely chopped
  • 500ml (2 cups) chicken style liquid stock
  • 125ml (½ cup) apple cider vinegar
  • 4 garlic cloves
  • 62.50 ml fresh continental parsley leaves
  • Mashed potato, to serve
  • Steamed green vegetables, to serve
  • 4 garlic cloves, crushed
  • ¼ cup finely chopped fresh continental parsley leaves
  • 125g butter, at room temperature
Instructions:
  • Crush fennel seeds in a mortar and pestle until fine. Rub pork all over with crushed fennel seeds and season.
  • Layer the base of a 5.5L (22 cup) slow cooker bowl with onions. Pour in stock and vinegar. Arrange pork on top. Sprinkle with garlic and parsley. Cover and cook on High for 7 hours, or until the pork is incredibly tender.
  • Create a flavorful garlic butter by blending minced garlic, fresh parsley, and creamy butter in a small bowl. Sprinkle with a pinch of salt to enhance the flavors.
  • Place the pork in a spacious baking dish, discarding any extra skin and fat. Set aside half of the slow cooker mixture. Pull the pork apart using two forks, and mix in the reserved mixture. Incorporate butter and season to taste. If the pork has cooled, heat it under the grill for 2-3 minutes until warmed.
  • Plate the pork alongside creamy mashed potatoes and colorful steamed vegetables.
