Tender lengua slow-cooked with onions, garlic, and bay leaf, then sautéed in butter for juicy taco filling.
Ingredients:
  • 1 beef tongue
  • 0.5 onion
  • 2 cloves garlic, or more to taste
  • 1 bay leaf
  • salt and ground black pepper to taste
  • 1 tablespoon butter
Instructions:
  • Add the beef tongue, onion, garlic, and bay leaf to a slow cooker, and season generously with salt. Pour in water until the beef mixture is fully covered.
  • Slow cook for 8 hours on Low heat.
  • Place the beef tongue on a work surface to cool slightly. Peel off the outer layer of skin and trim the rough end.
  • Cut the meat into bite-sized pieces.
  • In a skillet, melt butter over medium heat. Cook and stir chopped meat until tender, about 5-10 minutes. Season with salt and pepper to taste.
