Slow cooker crowd-pleaser for easy entertaining.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 clove garlic, minced
  • 2 boxes (16 oz each) Mexican prepared cheese product with jalapeño peppers, cut into cubes
  • 2 cans (10 oz each) diced tomatoes with green chiles, drained
  • 1/2 cup chopped green onions (8 medium)
  • 22 oz tortilla chips
Instructions:
  • In a skillet, cook the ground beef and garlic until the beef is cooked through; then drain. Transfer the mixture to a large slow cooker and stir in the cheese and tomatoes until well combined.
  • Cover the dish and simmer over a low heat setting for 3 to 4 hours, making sure to stir after 2 hours.
  • Just before serving, gently fold in the onions. Enjoy alongside crispy tortilla chips.
