Indulge in homemade satay pork curry with creamy coconut-peanut sauce, made effortlessly in the slow cooker with just 15 minutes prep time. Goodbye, takeout!
Ingredients:
  • 1.5kg piece pork scotch fillet, cut into 4-5cm pieces
  • 1 brown onion, cut into thin wedges
  • 2 tsp finely grated ginger
  • 90g (1/3 cup) natural crunchy peanut butter
  • 160ml can coconut milk
  • 125ml (1/2 cup) chicken style liquid stock
  • 60ml (1/4 cup) light soy sauce
  • 22.00 gm sweet chilli sauce
  • 1 red capsicum, deseeded, thinly sliced
  • 40.00 ml coarsely chopped unsalted peanuts
  • Fresh coriander leaves (optional)
  • Steamed rice, to serve
  • Lime wedges, to serve
Instructions:
  • In a large non-stick frying pan over medium-high heat, cook one third of the pork in hot oil, turning occasionally, for about 5 minutes until golden brown. Transfer to the slow cooker and repeat with remaining batches.
  • Lower the heat and add the onion. Cook for 4 minutes until soft, stirring occasionally. Include the garlic and ginger, cook for 1 minute until fragrant. Mix in peanut butter, coconut milk, chicken stock, soy sauce, and sweet chili sauce. Pour over the pork.
  • Cook the pork on Low for 6 hours until very tender. Adjust the taste by adding more sweet chili sauce if desired. Garnish with capsicum, peanuts, and coriander. Serve with rice and lime wedges.
