Indulge in creamy slow cooker satay chicken for a delectable meal.
Ingredients:
  • 8 (about 1.5kg) chicken thigh cutlets, trimmed
  • 3 tsp finely grated fresh ginger
  • 2 garlic cloves, finely chopped
  • 130g (1/2 cup) smooth peanut butter
  • 270ml Coconut Cream
  • 40.00 ml kecap manis
  • 1 small red onion, finely chopped
  • Fresh mint leaves, to serve
  • Fresh coriander leaves, to serve
  • Steamed rice, to serve
Instructions:
  • Season the chicken cutlets generously and sear them, skin-side down, in a large non-stick pan over high heat until golden, about 5 minutes. Flip and cook for an additional 3 minutes. Transfer the seared cutlets to a slow cooker and repeat with the rest of the chicken cutlets.
  • After draining the rendered fat from the pan, saving 2 teaspoons, lower the heat to medium-low. Sauté the ginger and garlic for 1 minute until fragrant. Mix in the peanut butter, coconut cream, kecap manis, and 125ml (1/2 cup) water. Pour this flavorful mixture over the chicken.
  • Slow cook for 4 hours or until the chicken is melt-in-your-mouth tender. Top with red onion, fresh mint, and coriander before serving alongside fluffy rice.
