Succulent pork belly with honey, mustard, and garlic sauce, perfect with mashed potatoes or on its own. Easy slow cooker recipe for tender, flavorful meat.
Ingredients:
  • 1 brown onion, thinly sliced
  • 4 fresh thyme sprigs
  • 80ml (1/3 cup) honey
  • 23.40 gm Dijon mustard
  • 16.00 gm brown sugar
  • 20.80 gm tomato sauce
  • 24.40 gm Worcestershire sauce
  • 250ml (1 cup) chicken stock
  • 250ml (1 cup) apple juice
  • 1.3 kg piece pork belly
  • 2 Granny Smith apples, peeled, cored, each cut into 8 wedges
  • Fresh thyme leaves, to serve
Instructions:
  • Spread a generous layer of onions, garlic, and fresh thyme sprigs at the bottom of a large 4.5L (18-cup) slow cooker.
  • In a jug, mix honey, mustard, sugar, sauces, stock, and apple juice. Pour the mixture into the slow cooker and place the pork belly on top. Cook on High for 5 hours and 30 minutes until the pork is very tender. Add apple wedges and cook for an additional 30 minutes until the apples are just tender.
  • Transfer the pork and apple to a large baking tray using tongs. Remove excess skin and fat from the pork, then shred it using 2 forks. Return the shredded pork and apple to the slow cooker and warm through. Serve by sprinkling with thyme leaves and seasoning to taste.
