Slow Cooker Honey Garlic Pork Loin Roast

Sear pork, slow cook with honey, lemon, and garlic for a sweet and tangy twist.
Ingredients:
  • 1 (3 pound) pork loin roast
  • 20 cloves garlic, peeled
  • 1 cup diced onion
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 0.25 cup fresh lemon juice
  • 2 tablespoons Italian seasoning
  • 0.25 cup honey
Instructions:
  • In a large skillet, heat oil over medium-high heat. Season pork with salt and pepper, then brown on all sides for 3 to 4 minutes each. Place the seared pork in a 6-quart slow cooker.
  • Place garlic cloves in the skillet and cook over medium-high heat, stirring often, until golden brown, approximately 5 minutes. Add onion and cook, stirring occasionally, until softened, about 3 minutes. Sprinkle flour over the garlic and onion mixture and cook, stirring constantly, for 2 minutes.
  • Add chicken broth to the pan and bring it to a boil, making sure to scrape all the flavorful browned bits from the bottom using a wooden spoon. Stir in lemon juice and Italian seasoning, let it come to a boil, then season with salt and pepper. Pour this aromatic broth with honey over the pork in the slow cooker.
  • Cook on Low for 6 hours or on High for 3 hours until the pork is tender and easy to shred with a fork.
  • Place the pork on a serving platter to rest for 5 minutes. Pour the cooking liquid into a saucepan and bring it to a boil. Reduce the heat to medium-low and simmer until thickened for 2 to 3 minutes. Lightly mash the garlic cloves.
  • Thinly slice the pork and arrange it beautifully with creamy mashed garlic cloves and a flavorful sauce.
