Whip up a delicious pulled pork burrito with creamy avocado, hearty beans, and zesty salsa for a quick and satisfying lunch option.
Ingredients:
  • 1 large flour tortilla
  • 35g (1/3 cup) coarsely grated cheddar
  • 1 green shallot, thinly sliced
  • 30.00 ml black beans, rinsed, drained
  • 125.00 ml pulled pork (see notes)
  • 1/4 avocado, coarsely chopped
  • Mild salsa, to taste, plus extra, to serve
  • Fresh baby coriander sprigs, to serve
Instructions:
  • Lay the tortilla down on a flat surface. Layer with cheese, shallot, beans, pork, and avocado. Finish by drizzling salsa over the toppings. Fold to secure all the delicious fillings inside.
  • Preheat a large frying pan over medium-high heat and spray with oil. Place the tortilla in the pan, seam side down, and cook for 2-3 minutes until golden. Flip and continue cooking for another 2 minutes until the tortilla is golden and the cheese is melted. Serve with additional salsa on the side.
