Succulent pulled pork, refried beans, spices, and gooey Cheddar cheese in a versatile pork burrito – pan-fried or soft!
Ingredients:
  • 3 pounds pork butt roast with bone
  • 1 medium onion, sliced
  • 6 cloves garlic, chopped
  • 2 (1.25 ounce) packages taco seasoning mix, divided
  • 1 (16 ounce) can refried beans
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (4 ounce) can chopped green chiles, or to taste
  • 1 (16 ounce) package shredded Cheddar cheese
  • 20 (8 inch) flour tortillas
  • 0.25 cup vegetable oil
Instructions:
  • In a large pot, combine pork roast with onion and garlic. Sprinkle one package of taco seasoning, then pour in enough water to cover the roast. Bring to a boil over medium-high heat, then reduce to medium-low and simmer for 2 to 3 hours until pork is tender and easily pulled apart with a fork. Check water level every 45 minutes and top up as needed. Once done, transfer roast to a cutting board. Remove vegetables, keeping around 1 cup of cooking liquid.
  • Shred pork using a fork, removing any extra fat. Combine the shredded pork in a bowl with refried beans, tomatoes, chiles, and remaining taco seasoning. Stir well until fully mixed, adding reserved cooking liquid if needed for moisture.
  • Evenly distribute the pork mixture down the center of each tortilla, then generously sprinkle with Cheddar cheese. Fold the bottom and top edges of the tortilla over the filling, then roll it tightly from one side to create a delicious burrito.
  • In a large skillet over medium heat, heat 2 tablespoons of oil. Carefully place two burritos seam side down and fry until golden, approximately 2 minutes per side. Drain on a paper towel-lined plate. Repeat with remaining burritos in batches of two.
