Quick and delicious homemade burritos.
Ingredients:
  • 18.20 gm olive oil
  • 500g pork loin steaks, thinly sliced
  • 1 red onion, halved, thinly sliced
  • 5.00 gm sweet paprika
  • 2 tsp ground coriander
  • 1 x 400g can chopped tomatoes
  • 1 x 400g can red kidney beans, rinsed, drained
  • 40.00 ml chopped fresh coriander
  • 8 flour tortillas
  • Shredded iceberg lettuce, to serve
  • Natural yoghurt, to serve
Instructions:
  • In a large non-stick frying pan, heat half of the oil over high heat. Cook half of the pork, stirring, for 3 minutes until golden. Transfer to a plate. Repeat with the remaining pork, reheating the pan as needed between batches.
  • Heat the remaining oil in the pan until shimmering. Sauté the onion for 2 minutes until lightly golden. Stir in paprika and coriander, cook for 1 minute. Add tomato and beans, bring to a boil, then simmer on medium-high heat for 3 minutes.
  • Add the pork back to the pan and let it simmer for about a minute until it's heated through. Remove the pan from the heat and mix in the coriander.
  • Spread a generous amount of the flavorful pork mixture down the center of each tortilla. Add a layer of fresh lettuce and a dollop of creamy yogurt. Roll up the tortillas tightly to seal in the delicious filling. Enjoy your delicious creation!
