Pork and bean stir-fry

Create a delectable pork and udon noodle dish in just 40 minutes for a family-friendly meal.
Ingredients:
  • 270g dried udon noodles
  • 27.30 gm olive oil
  • 450g lean pork fillet, thinly sliced across the grain
  • 1 onion, cut into thin wedges
  • 2 garlic cloves, thinly sliced
  • 4cm piece ginger, peeled, cut into thin strips
  • 150g green beans, cut into 4cm lengths
  • 2 carrots, cut into 4cm sticks
  • 2 large zucchini, cut into 4cm sticks
  • 20.00 gm water
  • 5.00 gm cornflour
  • 42.00 gm reduced-salt soy sauce
  • 82.50 ml mirin or sherry
Instructions:
  • Boil noodles in a large saucepan according to package instructions until al dente. Drain and rinse with cold water, then set aside.
  • Preheat a wok over high heat until smoking. Add 2 teaspoons of oil followed by half of the pork. Quickly stir-fry for 1 minute. Transfer to a plate. Repeat the process with the remaining oil and pork.
  • In a hot wok, pour in the rest of the oil. Toss in the onion, garlic, and ginger. Stir-fry for 2 minutes. Add the vegetables and continue stir-frying for another 2 minutes. Pour in the water, then cover and cook for 1 minute until the vegetables reach desired tenderness.
  • Whisk cornflour and soy sauce until smooth. Stir in mirin. Pour into wok with noodles and pork. Stir-fry until heated through. Serve hot.
