Spicy Sichuan pork and mung bean vermicelli - a flavorful and iconic dish.
Ingredients:
  • 2 cups mung bean vermicelli
  • 3 tablespoons vegetable oil
  • 0.5 pound ground pork
  • 2 tablespoons dark soy sauce, or more to taste
  • 2 teaspoons Sichuan peppercorn powder
  • 0.5 cup water
  • 2 stalks green onions, thinly sliced
Instructions:
  • In a bowl, submerge vermicelli in water and let it soak for a minimum of 15 minutes. Drain and set aside.
  • 1. Heat vegetable oil in a large frying pan until shimmering. Add ground pork and cook until browned and crumbly, about 5-7 minutes. Stir in 2 tablespoons soy sauce and peppercorn powder. Pour in water and bring to a boil.
  • Mix in the drained vermicelli with the pork until well combined. Allow it to cook until all the water has evaporated, approximately 5 minutes. Taste the dish and adjust the seasoning with more soy sauce if needed to suit your taste preferences.
  • Present the dish on a serving plate and garnish generously with fresh green onions.
