Pork Tofu with Watercress and Bean Sprouts

Zesty pork stir-fry with ginger, soy sauce, tofu, and veggies, topped with a spicy kick of red chile garlic paste!
Ingredients:
  • 1 (2 pound) boneless pork loin, cut into 1/2 inch strips
  • 1 cup soy sauce
  • 0.75 cup water
  • 1 teaspoon minced fresh ginger root
  • 1 tablespoon coarsely ground black pepper
  • 2 bunches watercress - rinsed, dried, cut into 1/2 inch lengths, thick stems discarded
  • 8 ounces bean sprouts
  • 1 (16 ounce) package firm tofu, drained and cubed
Instructions:
  • In a wok or skillet over medium heat, sear the pork until browned on all sides for about 5 minutes. Add soy sauce, water, ginger, and black pepper. Bring to a boil over medium-high heat, then reduce heat to medium, cover, and simmer until meat is tender for about 40 minutes.
  • Add the vibrant watercress and bean sprouts to the pot, allowing them to simmer until tender with a delightful crispness, approximately 10 minutes. Gently fold in the tofu, cover, and simmer for an additional 5 minutes.
