Spicy mince with tofu

Spicy Chinese pork and tofu stir-fry for a delightful dinner.
Ingredients:
  • 18.20 gm peanut oil
  • 1 leek, trimmed, halved, washed, thinly sliced
  • 1 long red chilli, seeded, thinly sliced (optional)
  • 300g pork mince
  • 150g green beans, trimmed, cut into 3cm pieces
  • 50.00 ml black bean garlic sauce
  • 300g packet firm tofu, cut into 3cm pieces
  • 21.00 gm light soy sauce
  • 20.00 ml shao hsing (Chinese cooking wine)
  • 15.00 gm caster sugar
  • 5.00 gm cornflour
  • Thinly sliced green onion, to serve
  • Sliced red chilli, to serve
  • Steamed jasmine rice, to serve
Instructions:
  • - Heat oil in a wok over medium heat. Saute leek and chilli (if using) until softened. - Increase heat to high. Add pork and brown for 3 minutes. - Stir in beans and black bean sauce until coated. - Pour in 1 cup cold water and simmer on medium heat for 12 minutes until reduced by 2/3.
  • Combine tofu, soy sauce, wine, and sugar in a skillet and stir-fry gently for about 3 minutes until heated through.
  • Combine cornflour and 1 tablespoon of cold water in a small bowl, then pour the mixture into the wok. Stir-fry gently for 2 minutes until the sauce thickens. Garnish with green onion and chili, then serve with rice.
