Spicy beef mince with jasmine rice

Spicy Asian beef mince ready in 15 minutes for a delicious twist on a classic dish.
Ingredients:
  • 600g beef mince
  • 55.20 gm vegetable oil
  • 2 cloves garlic, crushed
  • 6cm piece ginger, grated
  • 1 red capsicum, quartered, deseeded, thinly sliced
  • 1 bunch broccolini, trimmed, cut into 3cm lengths
  • 65.63 gm soy sauce
  • 28.60 gm honey
  • 20.00 ml Gochujang paste (hot pepper paste)
  • 450gm microwave jasmine rice, prepared according to packet instructions, to serve
  • Coriander sprigs, to serve
Instructions:
  • In a large wok or frying pan over medium-high heat, sizzle 2 tbsp of vegetable oil. Add the beef mince and sauté, using a wooden spoon to crumble the meat, until browned, about 5 minutes.
  • Once the liquid is drained, set the beef aside and place the pan back on medium-high heat.
  • Pour in the rest of the oil, followed by the ginger and garlic. Sauté for about 1 minute. Toss in the capsicum and broccolini and cook for 2 to 3 minutes.
  • Add the beef back to the pan along with the soy sauce, honey, and gochujang paste, then stir until everything is well coated.
  • Plate the mince on top of the rice and sprinkle with fresh coriander sprigs for a pop of flavor and freshness.
