Irresistible chili con carne with crispy nachos, perfect for spicy beef mince.
Ingredients:
  • 1 avocado, peeled, stoned, mashed
  • 37.60 gm sour cream
  • 10.40 gm chilli sauce
  • Sliced jalapeño chilli, to serve
  • Sliced birdseye chilli, to serve
  • Corn or tortilla chips, to serve
  • 1 brown onion, finely chopped
  • 1 green capsicum, seeded, finely chopped
  • 1 carrot, peeled, finely chopped
  • 2 celery sticks, finely chopped
  • 1 long red chilli, seeded, finely chopped
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 5.00 gm smoked paprika
  • 1 tsp dried oregano
  • 500g No Added Hormones Beef Mince
  • 100g bean
  • 2 x 400g cans diced tomatoes
  • 44.40 gm tomato paste
Instructions:
  • In a large saucepan, warm the oil over medium heat. Add onion, capsicum, carrot, celery, garlic, and chilli. Sauté for 5 minutes until the onion softens, stirring occasionally.
  • Stir in the cumin, coriander, paprika, and oregano for 1 minute until fragrant. Then, add the mince and cook for 5 minutes, breaking up any lumps with a wooden spoon until the mince changes color.
  • Combine the beans, diced tomatoes, and tomato paste in the pot. Bring to a gentle simmer. Lower the heat to medium-low, partially cover, and cook for 1½ hours, stirring occasionally, until the sauce thickens and the beans are tender.
  • Pour the chili con carne into a large serving dish. Top it with creamy avocado, tangy sour cream, and a drizzle of spicy chili sauce. Sprinkle with a mix of crushed chili. Serve alongside corn or tortilla chips.
