Spicy Cajun beef sausage rolls with a zesty Tabasco-tomato dip.
Ingredients:
  • 1 large celery stick, finely chopped
  • 500g beef mince
  • 1 small brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 70g (1 cup) fresh breadcrumbs
  • 35g (1/4 cup) pecans, finely chopped
  • 62.50 ml chopped fresh continental parsley
  • 20.00 gm Cajun seasoning
  • 22.60 gm barbecue sauce
  • 2 eggs
  • 3 sheets frozen puff pastry, just thawed
  • 250ml (1 cup) tomato sauce
  • 5.20 gm Tabasco sauce
Instructions:
  • Place the celery in a heatproof bowl and cover with boiling water. Let sit for 5 minutes, then drain thoroughly.
  • In a bowl, mix together celery, minced meat, onion, garlic, breadcrumbs, pecans, parsley, Cajun seasoning, barbecue sauce, and 1 egg. Season generously and mix thoroughly until fully combined.
  • Preheat the oven to 200C/180C fan forced, then line 2 baking trays with baking paper. Lightly whisk the last egg in a bowl.
  • Cut the pastry sheets in half. Divide the mince mixture into 6 equal portions and place one portion along the center of each piece of pastry. Brush one edge with egg wash. Fold the pastry over to cover the filling and seal by pressing the edges. Lightly score the tops of each roll to make 6 portions. Place the rolls seam side down on the trays. Brush the pastry with egg wash and pierce the tops a few times with a sharp knife. Bake for 25 minutes or until golden brown and cooked through. Slice into individual rolls along the scored lines.
  • Mix together the tomato sauce and Tabasco in a serving bowl. Enjoy with sausage rolls.
