Ingredients:
  • 3/4 cup uncooked regular long-grain white rice
  • 2 cups water
  • 1 cup thick & chunky salsa
  • 8 oz smoked kielbasa or Polish sausage, thinly sliced
  • 1 can (15 to 16 oz) black-eyed peas, drained, rinsed
  • 1 cup frozen corn
Instructions:
  • In a 4-quart saucepan, combine rice and water and bring to a boil. Reduce heat, cover, and simmer for 10 to 12 minutes, stirring occasionally.
  • Add the vibrant salsa, savory sausage, sweet peas, and tender corn to the mixture. Cook without a lid for 10 to 12 minutes, stirring often, until the corn is tender and the dish is heated through.
