Quick and flavorful Cajun red beans and sausage made effortlessly in the Instant Pot, perfect for a busy weeknight dinner. Enjoy over fluffy white rice.
Ingredients:
  • 1 (16 ounce) package dry kidney beans
  • 1 link smoked beef sausage, sliced
  • 6 ounces frozen onion, green bell pepper, and celery mix
  • 4 cloves garlic, minced
  • 1 (32 ounce) carton chicken broth
  • 2 teaspoons Cajun seasoning (such as Tony Chachere's®)
  • 0.25 teaspoon ground thyme
  • 2 bay leaves
  • 4 cups cooked rice
Instructions:
  • Place kidney beans in a large container and cover them with cool water, letting them soak for 2 hours.
  • Preheat pot on "Saute" mode, then add olive oil and sausage. Cook and stir until sausage browns, about 5 minutes. Add onion mix and garlic; continue to cook and stir until onion mix softens, 5 to 10 minutes. Turn off heat.
  • Add drained beans to the pot and gently incorporate them with flavorful chicken broth, Cajun seasoning, fragrant thyme, and aromatic bay leaves.
  • Seal the pot with the lid, set the valve to "Sealing," and select the "Bean" setting for approximately 30 minutes. Allow the pot to naturally release pressure until the pin drops. Finally, remove the lid.
  • Spoon the flavorful beans on top of a bed of fluffy rice.
