Tender pork shoulder cooked in homemade red chile sauce in an Instant Pot.
Ingredients:
  • 8 dried New Mexico chiles, stemmed and broken into small pieces
  • 2 cups low-sodium chicken broth
  • 1 tablespoon canola oil
  • 4 pounds pork shoulder, trimmed and cut into 1-inch cubes
  • 2 tablespoons all-purpose flour
  • 6 cloves garlic
  • 2 chipotle peppers in adobo sauce
  • 1 cup diced onion
  • 1 tablespoon cider vinegar
  • 1 teaspoon kosher salt
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon ground cumin
Instructions:
  • Place the New Mexico chiles in a heat-proof bowl.
  • In a small saucepan, bring the chicken broth to a boil. Pour the hot broth over the chiles and let them soften for about 30 minutes.
  • Preheat a multi-cooker, like an Instant Pot, using the Saute function. Dredge pork in flour and brown in batches in the pot for approximately 15 minutes until golden.
  • Blend soaked chiles in a blender with broth, garlic, and chipotle peppers until smooth.
  • Mix together the flavorful blended chile sauce, onion, vinegar, salt, oregano, and cumin in a bowl, then generously pour the sauce over the pork.
  • Secure the lid tightly, choosing high pressure based on the manufacturer's guidelines. Set the timer for 20 minutes, then give it 10 to 15 minutes for the pressure to build up.
  • Carefully quick-release pressure following manufacturer’s instructions for about 5 minutes. Remove lid once unlocked.
