Instant Pot red lentil soup made with raw cashews for a hearty vegan twist.
Ingredients:
  • 6 cups water
  • 1 medium yellow onion, halved
  • 1 large carrot, trimmed and peeled
  • 0.33333334326744 cup raw cashews
  • 1 large clove garlic
  • 1.5 teaspoons salt
  • 0.25 teaspoon ground black pepper
  • 2 cups red lentils, rinsed and drained
  • lemon, juiced
Instructions:
  • In a high-speed blender, blend water, onion, carrot, cashews, garlic, salt, and pepper until silky smooth.
  • Transfer the blended mixture to a multi-functional pressure cooker like an Instant Pot, then mix in red lentils. Seal the lid securely, select high pressure, adjust the timer to 10 minutes, and let the pressure build for 10 to 15 minutes.
  • Vent the pressure cautiously following the manufacturer's guidelines for quick-release, around 5 minutes. Then, unhinge and lift the lid before stirring in the lemon juice.
