Nourishing vegan Instant Pot soup with 15 beans, Italian tomatoes, veggies, smoked paprika, and garlic for a comforting meal.
Ingredients:
  • 8 cups vegetable broth
  • 1 (20 ounce) package 15-bean soup mix (seasoning packet not used)
  • 1 (14.5 ounce) can diced Italian-style tomatoes
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, chopped
  • 1 teaspoon sea salt
Instructions:
  • In a multi-functional pressure cooker (such as Instant Pot), add vegetable broth, rinsed beans, diced tomatoes, onion, carrots, celery, garlic, sea salt, paprika, and black pepper. Lock the lid, select high pressure following the manufacturer's instructions, and set the timer for 35 minutes. Let the pressure build for 10 to 15 minutes.
  • Follow manufacturer's instructions to naturally release pressure for about 10 minutes. Then, carefully quick-release pressure for about 5 minutes before unlocking and removing the lid.
