Easy Instant Pot Green Moong Dal

Instant Pot vegan moong dal: Hearty, high-protein lentil curry soup, quick and tasty!
Ingredients:
  • 1 onion, diced
  • 0.5 tablespoon minced garlic
  • 0.5 tablespoon ground ginger
  • 1 teaspoon cumin
  • 3 cups water
  • 1 cup moong dal (split husked mung beans)
  • 1 teaspoon coriander
  • 1 teaspoon garam masala
  • 1 pinch ground turmeric
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped cilantro
Instructions:
  • Preheat a multi-functional pressure cooker (like Instant Pot) using the Sauté function. Add olive oil, onion, garlic, ginger, and cumin. Sauté until tender, approximately 2 minutes.
  • In a pot, mix together water, moong dal lentils, coriander, salt, garam masala, cayenne pepper, and turmeric. Seal the lid securely. Set the pressure to high following the manufacturer's guidelines and cook for 15 minutes. Let the pressure naturally release for 10 to 15 minutes.
  • Follow the manufacturer's instructions for natural release, 10 to 40 minutes. Open the lid, then add lemon juice and cilantro, stirring well.
