Instant Pot Southern collard greens: Easy and quick recipe, with minimal ingredients. Customize with extra spices if desired.
Ingredients:
  • 1 bunch collard greens
  • 4 thick slices bacon, cut into 1-inch pieces
  • 4 cups water
  • 2 tablespoons white vinegar
  • 4 cups chicken broth
  • salt to taste
Instructions:
  • Start by giving the collard greens a refreshing rinse. Next, remove and discard the tough stems, then chop the greens to your preferred size.
  • Preheat your Instant Pot on the Saute function. Cook bacon until crispy, around 5 minutes. Turn off the Saute function. Deglaze the pot with water and vinegar, scraping up any browned bits. Stir in collard greens to coat, then add chicken broth and salt. Seal the lid securely.
  • Choose the high pressure setting following the manufacturer's guidelines. Then, set the timer for 5 minutes and wait for the pressure to build for 10 to 15 minutes.
  • Follow the manufacturer's instructions to naturally release pressure for 20 minutes. Quick-release any remaining steam for about 5 minutes. Unlock and remove the lid, then season with additional salt, if needed.
