Instant Pot Chicken Tacos with Chorizo, Jalapenos, and Saffron Greek Yogurt Sauce - a delicious and easy recipe combining bold flavors in a convenient way.
Ingredients:
  • 2 skinless, boneless chicken breast halves
  • 1 cup chicken broth
  • 1 onion, chopped, or to taste
  • 2 jalapeno peppers, minced, or to taste
  • 1 pound chorizo sausage
  • 2 cups plain Greek yogurt
  • 2 (.5 gram) packets saffron
  • 0.5 teaspoon vegetable oil, or as needed
  • 4 (6 inch) flour tortillas
  • 2 limes, cut into wedges
Instructions:
  • In a multi-functional pressure cooker like Instant Pot®, mix chicken, chicken broth, onion, and jalapenos. Close and lock the lid, select high pressure, and set the timer for 20 minutes. Let the pressure build for 10 to 15 minutes.
  • Heat a skillet over medium-high heat. Cook chorizo in the skillet until browned and crumbly, about 5 to 7 minutes.
  • Combine yogurt and saffron in a blender or food processor until the saffron infuses the yogurt with a vibrant yellow hue. Chill in the refrigerator while you prepare the chicken.
  • Drizzle a touch of oil in a pan over medium heat. Cook tortillas until golden brown, about 3 to 4 minutes.
  • Follow the cooker's instructions for natural pressure release for 10 to 40 minutes. Open the lid and slice the chicken breast. Fill each tortilla with chicken, cooked onion, and jalapenos. Top with saffron yogurt sauce and serve with lime wedges.
