Easy Instant Pot Russian cabbage soup: comforting, nutritious weeknight dinner.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 1 head cabbage, shredded
  • 1 potato, diced
  • 4 cups chicken stock
  • 0.33333334326744 cup stone-ground mustard
  • 0.25 cup ketchup
  • salt and ground black pepper to taste
  • 1 bay leaf
  • 1 clove
  • 1 clove garlic
Instructions:
  • 1. Heat oil in a multi-functional pressure cooker on Saute mode. Cook onion, carrot, and celery until onion is translucent, around 5 minutes. Add cabbage and potato; cook until cabbage begins to break down, 2 to 3 minutes.
  • Combine the chicken stock, mustard, and ketchup with the cabbage mixture. Cook and stir for about 1 minute until combined. Season with salt and pepper, then add bay leaf and clove. Finally, place the garlic in the center of the pot.
  • Secure the pot with the lid and select Soup setting or high pressure as per the manufacturer's instructions. Set the timer for 6 minutes, then give it 10 to 15 minutes for pressure to build.
  • After cooking, safely release pressure using the quick-release method as per the manufacturer's instructions for about 5 minutes. Once pressure is released, unlock and remove the lid.
